Slew of New Restaurants Emerging in Twin Cities

Among a bleak economic backdrop-- a surprising trend is emerging in the twin cities.
Six new restaurants popping up in as many months - one of them in downtown Monroe.
Meaning some are risking it all and opening up their doors.
Many of the owners admit this is the worst possible time to open up a restaurant.
But all they can do is try.
And for many, their life savings is on the line.
It seems like everyone is cutting back these days -- but that hasn't stop six new restaurants from opening up, during this possible recession.
At the Saigon cafe -- the Nyugen family says there just trying to get their slice of the American dream -- bad economy or not.
And five other restaurants are following suit -- from fine dining to sports grills.
